But one of the discoveries of quantum physics is that empty space is not really empty. It is a set of fields, fields that are vibrating. Strong field vibrations form particles. So, sometimes physicists describe empty space as a sea of particles rather than as a sea of vibrating fields. Quantum physicists are able to describe what these fields do, but they cannot easily explain what fields are. As to what fields do, it depends upon the field. When the electromagnetic field gains a unit of energy a quantum from an electron field, the electromagnetic field creates a photon. When the interaction goes the other way, and an electron field gains a unit of energy from the electromagnetic field, a photon disappears, and the electron becomes more energized. We say that the electron has absorbed the photon.
